Red Velvet Cake

If you love someone, show it! Celebrate love with the entire family by baking this special Red Velvet Cake sweetened with Stevia. These delicious cupcakes are Egg-Free, Butter-Less and SUGAR-FREE making them super healthy!

 

Dry Ingredients
1 Cup Flour (Can use refined flour or  wholewheat flour sifted twice)
25 Microspoons Pluck One Stevia Premium Blend OR ½ Cup Pluck One Stevia Brown
2 Tbsp Unsweetened Cocoa Powder
1 Tsp Baking Soda
2 Tsp Baking Powder
2 Tsp Red Food Color
Wet Ingredients
1/4th Cup Edible Coconut Oil
3/4th Cup Applesauce
1/2 Cup Buttermilk
½ Tbsp Apple Cider Vinegar
1 Tsp Vanilla Essence
Other
Oil / Ghee for greasing
Method
1. Pre-heat the oven to 180º C. Grease the cupcake moulds with a bit of oil/ghee and leave aside.
2. Sift the flour, baking soda, baking powder and cocoa and leave aside.
3. Take coconut oil and add the Stevia and whisk until smooth. 
4. Further add the other wet ingredients and sift in the red food color. Whisk again. 
5. Slowly pour the liquid into the dry ingredient mixture in batches and fold to mix. Mix well, making sure no lumps remain - but do not overmix. If the batter seems thick, then add some Coconut Oil. The consistency should not be too thin or thick, it should ideally be gloopy. 
6. Put 2 spoons of batter into each greased cake moulds and bake for upto 30 minutes or until the toothpick inserted in the centre comes clean.
Optional: Serve with whipped cream sweetened with Pluck One Stevia Premium Blend OR Stevia Brown.
